My own arrangement:

Gabriela Montero improvised a fugue on Cielito Lindo last night at Bass Hall in Ft Worth. She devoted the entire second half of her concert to soliciting tunes from the audience (who stood at their seats and sang them to her) and then immediately improvising a waltz, mazurka, romantic or baroque version of the tune. This being Texas, the tunes suggested were not particularly inspirational ("Deep in the heart of Texas," "You are My Sunshine," "The Eyes of Texas," etc.) but by the time Gabriela got done riffing on them, they actually became interesting.

She's a phenomenon, indeed, pupil of great Hamish Milne. I met her once upon in the Husum concert opening the jubilee rarities festival. Have a look on a popular (WDR) video of hers: http://www.youtube.com/watch?v=QUqhPoA5bIY from Cologne Philharmonic (phantastic place, BTW) - improvisations on the popular local carneval song "Mer losse d'r Domm en Kölle" (in Rhineland idiom "We let the cathedral stay in Cologne") with a very German and very impressed audience.
