Who were most of these composers? I never heard of 90% of them. Were they relatively minor composers who were hired to write music for the magazine?

Neither did I.

well, there were much more composers on this globe than just Bach, Beethoven and Mozart.... no, I guess many of them were pianists, piano teachers, piano professors, also organists, conductors, music editors / journalists.... who composed a little bit beside their actual job. And such a well-known magazine was probably a good platform for this.

They may not have been heavyweights in the field of music but nevertheless they composed the one or other lovely piece.
As you can see on some of the scores "Prize Composition Etude Contest" the magazine asked for compositions as well, and published the winners.
